Consumer Cafe: Texas Sheet Cake

April 4th, 2014

This, as the Pioneer Woman says, is THE BEST sheet cake ever. In Texas, we call it Texas Sheet Cake. Perhaps because The Pioneer Woman lives in Oklahoma, she omitted that part of the title, but it still is the yummiest version I have found of Texas Sheet Cake. You can find her step-by-step directions here. I love thepioneerwoman.com because she gives such great instructions, with lots of photos so you know you are doing it correctly!

Texas Sheet Cake

FOR THE CAKE:

  • 2 cups Flour
  • 2 cups Sugar
  • 1/4 teaspoon Salt
  • 4 Tablespoons (heaping) Cocoa
  • 2 sticks Butter
  • 1 cup Boiling Water
  • 1/2 cup Buttermilk
  • 2 whole Beaten Eggs
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla

FOR FROSTING:

  • 1/2 cup Finely Chopped Pecans
  • 1-3/4 stick Butter
  • 4 Tablespoons (heaping) Cocoa
  • 6 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 1 pound (minus 1/2 Cup) Powdered Sugar

Note: I use an 18×13 sheet cake pan.

In a mixing bowl, combine flour, sugar, and salt.

In a saucepan, melt butter. Add cocoa. Stir together.

Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.

Cut into squares, eat, and totally wig out over the fact that you’ve just made the best chocolate sheet cake. Ever.

Glam Alert: Clairol Professional Shimmer Lights Shampoo

April 3rd, 2014

Years and years ago, my darling hairdresser told me to use the Clairol Professional Shimmer Lights Shampoo once a week to take the brassiness out of my blonde highlights. If I  had to guess, I would say I have used this shampoo for at least 20 years. I purchase a big bottle of the shampoo about once a year, and I’m so OCD that I have to use it every Monday morning or I will forget if I used it or not that week!

I think it does a great job not only cleaning my hair but also keeping it blonde  and shiny.

If you have blonde hair that looks more yellow and dull, you need to try this stuff.

From Clairol Professional:

Protein-enriched conditioning formula tones down brassiness on blonde and silver hair, renews and refreshes faded highlights and ash-toned hair, removes the dull yellow in silver hair, and leaves hair shiny without residue.

Clairol Professional Shimmer Lights Shampoo also comes in Brunette and Red, which will enhance gold tones for dull light brown and fading red hair and add radiance to strawberry blonde and red hair.
