I’ve decided to start posting a weekly recipe on Fridays. First one is a recipe from my mom. There is not a person on the face of this Earth that has tried this salad and not loved it!
Make-Ahead Salad
1 large head of lettuce, torn up
1 to 2 green peppers, chopped
1 bunch spring onions, cut up (including tops)
1 can water chestnuts, sliced thin*
1 pkg frozen peas, separated but not cooked
Parmesan cheese**
1 Jar bacos***
2 c Hellman’s Mayo
1-2 tbsp sugar
Make layers in a bowl of the first five ingredients. Combine sugar and mayo and spread over top with spatula. Cover with parmesan cheese. Cover and refrigerate 24 hours. Just before serving, add bacon bits and toss.
*Buy pre-sliced in can
**I buy the real Parmesan cheese, not the kraft powdery stuff – you can get a small bag already shredded
***I buy the real bacon bits – not the artificial ones
I actually make something similiar alot in the summer. we love it….and use it as a meal!

I could not have an Easter, Thanksgiving, or Christmas without Make-Ahead Salad or I think my family would disown me!
