Consumer Cafe: Lettuce Wrapped Cheeseburgers

One of my fellow weight watcher pals sent me the link from Food I Make My Soldier (don’t you love that name?), for a different take on a hamburger. Who doesn’t like a good ol’ hamburger? Yum. Just skip the bun and you’re done. (see what I did there?)

So I must admit I buy precooked hamburger patties all the time, and have a patty with cheese, but it never dawned on me to add the rest. And I’ve even had lettuce wraps before! DOH! So you can make your own, or be lazy like me.

Nonetheless, here’s the yummy recipe!

Lettuce Wrapped Cheeseburgers

  • 2 lbs ground beef
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp Worcestershire Sauce
  • 1 Tbsp oregano
  • 2 Tbsp reduced sugar ketchup
  • 2 tomatoes, sliced thin
  • 1 head of iceberg lettuce, leaves removed
  • 6 slices American cheese
Spread:
  • 1/4 cup mayo
  • 3 Tbsp reduced sugar ketchup
  • 1 Tbsp dill pickle relish
  • dash of salt and pepper
Heat your grill pan or skillet on medium heat and add a little Kerry Gold Butter.
In a large bowl, mix together the beef, salt, pepper, Worcestershire, oregano and ketchup.
Divide the mixture into 6 sections, and roll each piece into a ball then press down flat and place on the grill pan.
Cook each burger for about 5 minutes on each side. Do not press down the burgers, that just dries them out.
Once you flip the burger, and the other side has about 2 minutes to cook, put 1 slice of cheese on each burger.
In a small bowl mix together the spread ingredients and refrigerate.
Once you have cooked all your burgers and removed them from the pan, assemble them.
Place 1 cheeseburger on the lettuce leaf, top with 2 slices of tomato, a spoonful of spread, then wrap top to bottom with another lettuce leaf.
So, that’s it! Super simple and easy!
Recipe makes 6 cheeseburgers
Each lettuce wrapped burger has 2.23 carbs

Glam Alert: Disposable Sphere Shaped Mascara Wand

One of my favorite makeup tools is Disposable Sphere Shaped Mascara Wands. You can find them at Sally’s Beauty Supply if there’s one near you, or you can order a bag of 25 from amazon (link above). I use them to unclump my mascara, and also to unclump my DIY Eyelash Growth Serum. It works much better than a safety pin!

The ones at Sally’s Beauty are Face Secrets, which also is the brand of my Makeup Sponges that I adore. A bag of 12 of them at Sally’s are around $4, and the bag of 25 above from Amazon is $12, so clearly the better buy is Sally’s.

Voluspa Santiago Huckleberry Candle

My future daughter-in-law gave me a Voluspa Santiago Huckleberry, 16 oz. Large Glass Jar Candle, for Christmas. It comes in this gorgeous glass container, that I promise you I will be reusing after I finally hit the bottom of this candle. I usually burn it while I’m at my computer working, listening to my Zen music, and the combination of both keeps me quite tranquil!

The Santiago Huckleberry scent that I have contains ripe huckleberry, vanilla, and crushed sugar cane. Not too strong or sweet, I promise. It is part of the Japonica line of fragrances at Voluspa. You can find a list of all scents at voluspa.com. The Voluspa line is carried at Anthropologie and Nordstrom, if you want to go in and sniff them all for your favorite.
