In the dog days of summer here is a quick, light, easy salad recipe.
Sally-Gally’s Olive Caprese Salad
- 1/2 – 2/3 container grape tomatoes cut in half
- mozzarella cheese sticks cut in 1/4 pieces
- pine nuts
- 2 – 4 Tbs. Boscoli Italian Olive Salad*
- 1 Tbs. Olive oil
- Balsamic vinegar to taste
- Pepper
Toss tomatoes and cheese sticks together with olive salad.
Toast pine nuts until golden brown – cool and toss in
Add olive oil and balsamic and pepper to taste
*Here is a picture of Boscoli Italian Olive Salad. I have not had a problem finding this, but wanted to give you a picture so you knew what you were looking for when you go to the supermarket.
The Best. I didn’t know it was called caprese, as I just call it sally’s salad. I made it this last weekend!

If would want a variation to this recipe (especially if you don’t care for olives) replace the olive salad with fresh basil to taste (that will make it a true caprese). Also very yummy : )
