I’ve started my grocery list for Thanksgiving and the first thing I thought of was that I was not going to go through another holiday without this handy Three Tier Oven Rack so that I can cook more than one or two things at a time. It is a madhouse in my kitchen on holidays, and I don’t have a gourmet kitchen with two or three ovens! This is the perfect solution for us normal folks.

App of the Week: Paint and Play Yummy Thanksgiving

Don’t think for a moment that I just randomly pick apps to tell you about. I probably downloaded 25 Thanksgiving game apps and tested before deciding which one to share with you. It’s a tough job, but I will color and play for you, my dear readers!

This looked like the easiest game for a small child to play. And you know I love to entertain the small children so they don’t get bored around me! The Paint and Play Yummy Thanksgiving app allows you to color a turkey, and then turn it into a puzzle too! So it’s double the fun!

Veteran’s Day

They Did Their Share
On Veteran’s Day we honor
Soldiers who protect our nation.
For their service as our warriors,
They deserve our admiration.
 
Some of them were drafted;
Some were volunteers;
For some it was just yesterday;
For some it’s been many years;
 
In the jungle or the desert,
On land or on the sea,
They did whatever was assigned
To produce a victory.
 
Some came back; some didn’t.
They defended us everywhere.
Some saw combat; some rode a desk;
All of them did their share.
No matter what the duty,
For low pay and little glory,
These soldiers gave up normal lives,
For duties mundane and gory.
Let every veteran be honored;
Don’t let politics get in the way.
Without them, freedom would have died;
What they did, we can’t repay.
We owe so much to them,
Who kept us safe from terror,
So when we see a uniform,
Let’s say “thank you” to every wearer.

Consumer Cafe: Pumpkin Butter

Doesn’t that look yummy? There is nothing better than pumpkin butter on toast! Oh wait; there is something better, low calorie pumpkin butter! Only one weight watcher point for two tablespoons!

I’ve been making this recipe for years, and it’s so easy I can make plenty for my husband and me and plenty to give away to my friends and family. Then they think I’m some sort of master baker with a big, kind heart. Let’s just keep this easy recipe between us.

Pumpkin Butter (from skinnytaste.com)

Servings: 30 • Serving Size: 2 tbsp • Old Points: 1 pts • Points+: 1 pts
Calories: 32 • Fat: 0.1 g • Protein: 0.5 g • Carb: 9.5 g • Fiber: 1.3 g • Sugar: 8 g
Sodium: 3.5 g

  • 3 1/2 cups pumpkin puree, or 1 (29 ounce) can (not pumpkin pie filling)
  • 2 tsp vanilla extract
  • 3/4 cup apple cider or juice
  • 1 cup packed brown sugar
  • 2-3 cinnamon sticks
  • 1-2 tsp pumpkin pie spice (to taste)

Combine pureed pumpkin, vanilla, apple juice, spices, cinnamon sticks and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 – 40 minutes or until thickened. Stir frequently. Adjust spices to your taste. Makes 3 3/4 cups.
