Not only is this recipe easy, but it is also gluten -free. Mexican, or Tex-Mex food as we call it in Texas, is one of my favorites. My favorite, if you must know, and haven’t figured out by now, is desserts! I got this great recipe from Bisquick.
Impossibly Easy Taco Pie
- 1 lb. lean (at least 80%) ground beef
- 1 medium onion, chopped (1/2 cup)
- 1 package (1 oz) Old El Paso® taco seasoning mix
- 1 can (4.5 oz) Old El Paso® chopped green chiles, drained
- 2 eggs
- 1 cup milk
- 1/2 cup Bisquick® Gluten Free mix
- 3/4 cup shredded Monterey Jack or Cheddar cheese (3 oz)
- 3/4 cup chopped tomato
- 1 1/2 cups shredded lettuce, if desired
- Salsa, if desired
- Sour cream, if desired
- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix. Spoon into pie plate. Top with chiles.
- In small bowl, stir eggs, milk and Bisquick mix until blended. Pour into pie plate.
- Bake about 25 minutes. Top with cheese and tomato; bake 2 to 3 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Serve with lettuce, salsa and sour cream.
EXPERT TIPS
Try other toppings like shredded lettuce, sliced green onions, chopped black olives, guacamole or crushed corn chips.

This is one of my indulgent makeup items. I love everything about it.
I love the compact, the product, and the applicator sponge. I can touch up my makeup without any worry whatsoever that it is going to cake up on me.
It is referred to as “foundation” but I only use it as a touch up powder that I keep in my handbag. I have had it for years, long past the general rule of thumb of only keeping makeup for six months. But I do that with everything except mascara. You know how I go through mascara!
So if you are looking for a powder compact, this is the one you should try. The Dior Diorskin line in general is great, and you can find it at Sephora or sephora.com. I have tried their liquid foundation and was very tempted to buy it, but the price is a bit steep. That’s why I can justify the compact because I know it will last for years. Not so much for liquid foundation.

Are you getting ready for back to school? Oy vey did this summer go by quickly.
A great portal for homework resources for your kids during the school year is kidskonnect.com. The website was started in 1999 by a teacher who wanted to create a site that provided great resources for children to learn to use the internet safely and cover a wide variety of topics that children would use to aid in their homework and curriculum areas taught in schools.
It’s a great site to bookmark to have handy for your kids when they need help or resources with their reading, writing, and arithmetic! It is also a great resource for science, social studies, geography, music, art, and even fun and games.
Boy I wish this internet thing had been around when I was a kid!
