Consumer Cafe: Healthy Nachos

This yummy recipe is from Women’s Health Magazine. Don’t thank me, I love giving you these reasons to eat nachos and say that you are being healthy! Enjoy!

Nachos With Chicken and Black Beans

  • 6 oz tortilla chips (round chips are preferable)
  • 2 cups cooked chicken, shredded
  • 1 can (16 oz) black beans, rinsed and drained
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 red onion, diced
  • Juice of 2 limes
  • 1/2 cup light sour cream
  • Chopped cilantro Salsa (either fresh or your favorite bottled salsa)
  • Pickled Jalapenos

Preheat the oven to 425°F. Arrange the chips in a single layer on a large baking sheet. Spoon the beans evenly over the chips, then top with the cheese, chicken, and onion. Bake for 15 to 20 minutes, until the cheese is fully melted and bubbling. Remove.

Combine the lime juice, sour cream, and cilantro. Spoon over the nachos. Top with the salsa and jalapenos.

Snoozies Womens Fleece Lined Footies

My friend Sally got some of these cuddly-wuddly slippers on our last shopping trip. I did not. Then she put hers on, and I immediately wanted some. You know how I am! If you have it, I want it. I really should seek professional help

Snoozies Womens Fleece Lined Footies are just the thing to wear around the house and keep your footsies warm. They are a cross between a slipper and a sock. And there are lots of different patterns to choose from.

Sorry, I am partial to animal prints. But I promise there are lots of patterns.

You can find them on amazon.com for about $12. You can also find the Snoozies in most gift stores, or card stores. I did find something very similar at Walmart yesterday for about $5, but all the cute patterns (i.e., animal prints) were sold out in my size. My quest continues. This would make a great Christmas gift. Although right now my toes are cold, and I want some now!
